Whirlybird is a new all-day café, bar, and modern tavern on Victoria Street in Edinburgh’s Old Town. Serving coffee and pastries from 9am, modern Scottish bistro dishes, and signature cocktails until late.

Whirlybird opens on Monday, 18 May 2026 at 36-38 Victoria Street, taking over the former Maison Bleue site.

The two-level venue (four interconnected rooms) seats up to 100 and includes a standalone bar and a semi-private dining room for up to 16. It keeps original 250-year-old features, such as a listed spiral staircase and curved stone arches, alongside modern touches like velvet banquettes and brass details.

Head chef Lucia Gregusova (ex-Hawksmoor) focuses on Scottish produce. Expect dishes like whipped crowdie, whole grilled fish, seared flat iron steak, and Shetland mussels. Drinks come from Jono McDowell (ex-Panda & Sons) with cocktails including the Freezer Martini and Whirlybird Highball, plus local beers and a solid whisky list.
